Eat your quark, and keep the whey (the clear liquid which drained out) for baking – use it in place of buttermilk. The longer you leave it, the thicker and firmer your yo-cheese will be.ħ. Place in the fridge, and leave to drain for 24-36 hours. Cover the strainer with cheese cloth – this needs to cover the whole strainer with a little hanging over the edge.Ħ. Optionally mix any fruit or herbs you would like to flavour your yo-cheese into the yoghurt.ģ.
